Za'atar Classic is a closed system. It has been in equilibrium for centuries. Adding to it risks disrupting everything — a single additional ingredient can flatten the thyme, overwhelm the sumac, make the sesame disappear. We tested fourteen additions across both za'atar SKUs. Most of them did exactly that. Persian lime from Fars Province — the Omani lime, the limu Omani of Persian Gulf cooking — did the opposite. It lifted the blend. It did not change what za'atar is. It revealed a frequency within it that was already there but not yet expressed. That is the distinction between an addition that belongs and one that does not.
