On building a food company
the Arabian Gulf deserves.
I have been eating well for most of my life. I know what craft tastes like. I know the difference between an ingredient that was chosen and one that was specified. That difference — between choosing and specifying — is the only thing Novra Foods is about.
Why this. Why now.
The Arabian Gulf does not lack food options. It lacks, in one specific category, a brand that treats the market as a destination rather than a distribution territory. Plant-based snacking has arrived here in the form of products designed elsewhere, for elsewhere, that happen to clear local certification. They are not wrong, exactly. They are just not made with the Gulf in mind. Not in flavour, not in format, not in the underlying conviction that this market is worth building something genuinely excellent for.
I studied that gap for the better part of 2024. What I confirmed was not a gap in supply — there is no shortage of product. The gap is in standard. In the absence of a plant-based snack that could sit on the finest table in Dubai and belong there. Not as a dietary accommodation. As the thing you reach for first.

The decision to do it properly.
I could have launched faster. The market exists now, the demand exists now, and there are manufacturers who will produce at speed. I chose not to. I chose European partners — in Germany and the Netherlands — not because of the provenance story, though that story is true, but because those facilities represent the highest standard of plant food manufacturing in the world. And I chose to iterate. Twenty-eight rounds of formulation across six flavour candidates before I was satisfied. That is an unusual number. It was the right number.
The za'atar took the longest. Not because the formulation was difficult — the herb blend is ancient, it knows what it is — but because za'atar belongs to this region in a way that demands respect. Every person in this market carries a personal standard for how za'atar should taste. To use it in a product is to enter that conversation, and the only acceptable outcome is to add to it rather than diminish it. I believe we have done that.
What we are not.
Novra Foods is not a wellness brand. I have no interest in telling anyone what to eat or why plants are better. That argument belongs to a different company. We make food that happens to carry no animal products — because when plant ingredients are chosen and handled properly, they do not need animal products to be excellent.
Six GCC markets simultaneously. Not staged — simultaneous. Because the Arabian Gulf is one food culture expressed across six nations, and a brand that takes it seriously enters all of it at once. That is what we are doing in 2026.
An honest statement.
I know the products are good. I have eaten them across every iteration, in every room, with every kind of person. The ones who know food most precisely — the hardest critics — have reached for a second one without saying anything. That is the only signal that matters. Not a score. Not a certification. A second hand reaching for the bowl.
That is what Novra Foods is. I am glad it exists, and I am glad it exists for this region.
