Protected Designation of Origin is not a marketing designation. It is a legal guarantee that the product was made in a specific place, by a specific process, to specific standards. La Vera smoked paprika — Pimentón de la Vera — is the only paprika in the world to hold this status. It is produced in the Extremadura region of Spain from capsicum peppers that are dried over slow-burning holm oak and cherry wood smoke for a minimum of three weeks. The result is categorically different from unsmoked paprika or paprika smoked by other methods. It is deeper, less one-dimensional, with a complexity that reveals itself over time rather than immediately. That is the only paprika we use.
